Run! Do not walk to make this–what I’m calling–“Emergency Chocolate Cake.”

How are you lovelies spending this lovely mid-January weekend? It seems like the entire continental US is in freezing conditions. Although it is in the 50s in the Texas, even that is considered cold, especially because it was below zero last night. On top of the weather, it’s a “no-bones day,” so I think that calls for a stay-at-home Saturday.

This chocolate cake recipe truly came out of an emergency. Well, not a medical one, but an emotional one. Hope no one reading is anti-female here because I think no one should be squeamish when I say that I’m currently on my time of month. The past few days have been so draining. I was constantly on the go-go-go, and then I got my period and consequently spent Thursday, Friday, and today, binge watching trash television, aka Season 3 of “Too Hot to Handle,” and eating copious amounts starch and chocolates.

Disgusted with myself for eating just chocolate bars and wanting something more substantial, I really craved a warm piece of chocolate cake. Having no cake at home, I popped an Advil to relieve the cramps and did it myself.

Literally, this recipe was devised out of a whim, so I’m writing this blog post as I am eating and moaning in delight. The lovely light crackle top, the soft fluffy–and dare I say–moist texture. I can’t believe how luscious and delicious this cake turned out. As all my recipes come about, I just threw some ingredients together and surprise myself by how (usually) good they turn out. Not to brag, but I think I have what’s called a “cooking-and-baking-instinct,” in that I don’t need a recipe to make good food.

I also just realized that the last time I shared a recipe was nearly 1.5 months ago, and it also was a chocolate cake: Flourless Keto Brownie Cake. I guess I just have a thing for chocolate cakes. Both recipes are actually very similar, unintentionally so — I’d completely forgotten about that flourless keto brownie recipe. They both use almond butter and eggs as the base of the cake. The difference between today’s recipe is that it includes a little bit of oat flour, which makes the cake more fluffy and soft, rather than fudgy like the keto / flourless one I shared earlier.

Emergency Healthy Chocolate Cake

Ingredients

  • 70 g unsalted, all-natural almond butter
  • 1 egg
  • 70 g egg whites
  • 1/4 cup erythritol or real sugar
  • 60 g Dutch-processed cocoa powder
  • 1/4-1/3 cup oat flour
  • 1 tsp baking powder
  • a pinch salt
  • 1/2 tsp vanilla extract

Directions

  1. Preheat over to 350*F.
  2. Combine the almond butter, egg, egg whites, and erythritol (a sugar substitute) / real sugar. Mix until smooth.
  3. Add in baking powder, pinch salt, vanilla, and the cocoa powder. And mix until combined and smooth.
  4. Add in the oat flour and gently mix, be careful not to over-mix.
  5. Bake for about 25-30 minutes, to your liking.
  6. Enjoy!
